We’ve finally done it. We managed to twist his arm, and Mr. P has officially agreed to share the legendary P Family Secret 1 2 3 4 Pancake Recipe. Usually kept under lock and key, Mr. P’s special method is the stuff of family legend—guaranteeing the perfect golden flip and a batter so light you'll be coming back for thirds (or fourths, we won't judge!). Whether you’re a traditional lemon-and-sugar family or you go wild with the toppings, this is the foundation you’ve been waiting for.
Ready to flip like a pro? Just promise Mr. P you won’t share it with the neighbors!
📝 The Secret Formula
100g plain flour
2 medium eggs
300ml milk
40g butter
Pinch of salt
👨🍳 Mr. P’s Golden Rules
Add the butter to your frying pan and put on a low heat until it melts.
Meanwhile put the flour in a large bowl and crack in the 2 eggs.
Once the butter has melted add it to the flour and eggs.
Gradually add the milk a bit at a time and continue to whisk until fully combined until no lumps remain.
Top Tips:
If possible leave the mixture to stand at room temperature for at least 30 minutes before cooking.
Use butter to grease the pan instead of oil.
Make sure your pan is hot.
Depending on how thin you like your pancakes this recipe should make about 12. We love thing crepe style pancakes.
You can't beat a classic lemon juice and sugar topping but we sometimes like to add pistachio creme and strawberries to ours.
Pro Tip:
If you want to get fancy with the pistachio version, fold the pancake into quarters (the "triangle" fold) and drizzle a little extra creme over the top.
